You can always give your bad guys one of our classes/professions and build them using the regular skills, but sometimes you have monsters that don't really fit with the class/profession/skill choices so this is going to be a list of MONSTER / BADDIE only skills you can give your monster.
Ankle Biter - You know how take a mouthful out of anyone who tries to overpower you. When you are attacked, you can respond with a bite even if it is not your turn.
For: Goblins and small Monsters
Awesome Blow - This gives the monster a double roll of their combat dice 1/combat.
Blood Revenge - When you are attacked, and dealt damage, you may respond to the attack with your own against the same person that attacked you allowing you to roll your dice and weapon dmg without need of a Strike. 1/combat.
Boon of Bones - Piercing and slashing weapons slip harmlessly between your bones.

Constrict
Energy Drain
Fast Healing
Fear
Frightful Presence
Impaling Charge - Your charging attack impales opponents on your deadly horns. You are able to make a grapple attempt as well.
Poison
Pounce
Regeneration
Resistance
Immunity
Spine Attack - You have spines on your body and may fire these as attacks upon your enemy. In one round you may fire up to 2 of these spines, they have the same damage as a dagger (1d4). You may also pull these from your body and use them as daggers if you wish.
Flyby Attack
Multiattack - A creature with the ability to attack with more than one weapon/natural weapon can make up to three attacks in one round.

Wingover - A flying creature can make a quick direction change while flying, evading the attack.
Bone-Breaking Whip - Your attack with your tail breaks bones and dislocates joints.
